Cinnamon Honey Roasted Chickpeas

I LOVE Roasted Chickpeas….as long as I don’t over cook them (my first batch were hard enough to break teeth!). This recipe comes from a friend and I can’t wait to get to the store to buy more cinnamon and try this one out!! Let me know what you think or if you have any other Roasted Chickpea recipe that you enjoy.

Cinnamon Honey Roasted Chickpeas

Drain and rinse a can of chickpeas.  Dry them out (a few minutes) on paper towels.   Spread them out on a parchment lined cookie tray (in a single layer) and roast at 375 degrees for 40 minutes.  Once the are roasted, mix together 1 tsp cinnamon, 1TBSP honey, 1/2 TBSP olive oil and a shake of sea salt in a bowl and toss the hot chickpeas in the mixture.  I put them back in the oven for 5 minutes and cooled….That’s it…
